This Women’s History Month, Sushisan is proud to showcase Tenbi Tokubetsu Junmai, a signature creation of pioneering sake master Miki Fujioka.

Fujioka stands out as a rare female brewer in a field traditionally dominated by men. She has become renowned in the sake brewing industry for her innovative approach, keen sense of nuance, as well as her dedication to changing people’s perceptions of sake. Her creations, particularly the Tenbi Tokubetsu Junmai, defy traditional expectations with a “new world” style that’s as bold and fearless as her journey. Tenbi Tokubetsu Junmai, with its intricate blend of cherry, kiwi, young melon, and a touch of steamed rice aromas, challenges the conventional. This sake represents more than just a beverage; it is a symbol of the triumph of innovation, the beauty of diversity, and the significant impact women are having on the craft of sake brewing.

Sake-san

the Sushi-san team is excited to announce our private-label impression, brought to life by the talented team at Daimon Brewery in Osaka, Japan. Our own sake sommelier, Daniel Bennett, traveled to japan to inform the production.

The connections to our sister city are reflected in the label, designed by Alex Payne, with a bridge connecting the skylines of Osaka, Japan to Chicago. As Osaka is the “food capital” of Japan, this sake was brewed specifically to pair with the bold flavors that paint our own city’s culinary landscape.

An award-winning regional brewery, Daimon Shuzo has crafted a sake that is approachable, bright, crisp and food-friendly.
